Pelmen Foods Potato &amp; Fried Onion Perogies*<\/li>\n<li>5 Bacon strips (chopped)<\/li>\n<li>1 Small yellow onion diced<\/li>\n<li>1 cup Red pepper (diced)<\/li>\n<li>4 Eggs<\/li>\n<li>\u00bd cup Smoked cheddar, shredded<\/li>\n<li>Salt and fresh ground pepper<\/li>\n<li>1 tbsp. Flat leafy parsley (finely chopped)<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat oven to 400C.<\/li>\n<li>Bring a large pot of water to a boil. Boil perogies and stir occasionally for 5 mins. Drain and set aside.<\/li>\n<li>In a large skillet over medium heat, fry bacon until golden and crispy. Remove and set aside.<\/li>\n<li>Leave one table spoon of the bacon grease and saut\u00e9 onions until soft and translucent, 1-2 minutes.<\/li>\n<li>Add red peppers and saut\u00e9 for an additional minute. Toss in perogies and cook stirring occasionally for 3-4 minutes.<\/li>\n<li>Add bacon and stir to mix well. Remove skillet from the heat and make 4 shallow indentations into the perogy hash. Crack an egg into each indentation.<\/li>\n<li>Top with shredded cheese around the eggs and transfer skillet to the oven and bake until the egg whites set, about 8-10 minutes.<\/li>\n<li>Season with salt and pepper to taste and sprinkle with parsley.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<p>Possible Toppings: Feta, Hot Sauce, Cilantro, Chives<\/p>\n<p>*Use any savoury Pelmen Foods Perogies for this recipe.<\/p>\n<\/p><\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Perogy Skillet Hash 1 pkg.
