Olive oil<\/li>\n<li>1 Red bell pepper  (\u00bc inch slices)<\/li>\n<li>1 Small sweet onion (\u00bc inch slices)<\/li>\n<li>1 Zucchini  (\u00bc inch rounds)<\/li>\n<li>7 Shiitake mushrooms (stems trimmed and cut in half)<\/li>\n<li>2 tbsp. Extra-virgin olive oil<\/li>\n<li>2 tbsp. Balsamic vinegar<\/li>\n<li>Salt and fresh ground pepper<\/li>\n<li>\u00bd cup Goat feta (crumbled)<\/li>\n<li>2 tbsp. Flat leaf parsley (stems removed, finely chopped)<\/li>\n<\/ul>\n<h4>Possible Toppings: Chives, Parsley, Chilli Peppers<\/h4>\n<\/p><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Bring a large pot of water to a boil. Add perogies and cook stirring occasionally for 6 mins. Add to a large mixing bowl and set aside.<\/li>\n<li>Preheat grill to medium-high heat. Add grill basket on grill to heat.<\/li>\n<li>In a large bowl, toss vegetables with olive oil and season with salt and pepper.<\/li>\n<li>Place in grill basket and grill for 7-8 mins stirring occasionally.<\/li>\n<li>Add vegetables to perogies.
