(454g)  Pelmen Foods Perogies*<\/li>\n<li>3 tbsp. Olive oil<\/li>\n<li>2 Large garlic cloves (minced)<\/li>\n<li>2 Medium eggplants (diced)<\/li>\n<li>5 to Matoes (diced)<\/li>\n<li>Salt and ground pepper<\/li>\n<li>1 tbsp. Italian bread crumbs<\/li>\n<li>\u00bd cup Parmesan cheese (grated)<\/li>\n<li>Fresh basil for garnish<\/li>\n<\/ul>\n<h4>Possible Toppings: Chives, Chilli Peppers.<\/h4>\n<\/p><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat oven to 475F.<\/li>\n<li>Bring a large pot of water to a boil. Add perogies and cook stirring occasionally for 5 mins.<\/li>\n<li>Heat oil in a large oven proof skillet over medium heat. Add garlic, eggplant and saut\u00e9 for 3-4 minutes.<\/li>\n<li>Add tomatoes and season with salt and pepper. Cook, stirring occasionally until tomatoes have released their juices and mixture has become saucy, 8-10 mins.<\/li>\n<li>Add perogies and stir gently to mix. Drizzle with bread crumbs and top with parmesan cheese.<\/li>\n<li>Bake for 5-6 minutes until cheese has melted.
